Tsubaya opened on Kappabashi in 1956, before the street became famous for knives, and supplies professional chefs as well as home cooks. The narrow shop is packed with gyuto, santoku, yanagiba and specialist blades in carbon and stainless steel, clearly labelled so you can compare them. It also stocks whetstones and sharpening tools.
