About

Tonki is the purist's tonkatsu. Opened before the war and still run with almost military discipline, it serves essentially two things: hire (fillet) and rosu (loin), as set meals with rice, cabbage and a rich pork miso soup. Diners sit at a long L-shaped wooden counter facing the open kitchen, where cooks triple-dredge each cutlet in flour, egg and coarse breadcrumbs and fry it slowly in lard. A host memorises everyone's order as they wait on benches along the wall, without writing anything down, and seats the room in a rotating choreography. The cutlets are thick and crunchy rather than delicate, and the whole place has the feel of an old Tokyo institution. Hours are short (late afternoon to early evening), so plan around them.
