About
Sushi Kojima's omakase starts with a generous procession of drinking snacks such as steamed abalone, tender octopus and salt-grilled nodoguro (blackthroat seaperch) before moving to nigiri. The chef uses large-grained rice from the previous year's harvest and blends red vinegar with rice vinegar so the shari can stand up to everything from lean tuna to delicate whitefish. Pickled tuna, steamed anago and kanpyo are classic, labour-intensive pieces. It holds one Michelin star in the 2026 guide.
