Behind Senso-ji in the quieter Ura-Asakusa district, Isshin has long been a destination for diners who want Edomae sushi as it was before refrigeration: fish aged, salted, vinegared, kombu-cured or simmered, each piece with 'shigoto' (work) in it. It has held a Michelin star in past guides and appears on Tabelog's top sushi lists. The atmosphere is that of a neighbourhood shop, which makes the depth of craft even more striking.
