About

Shiawase no Pancake ('happiness pancake') opened its flagship on Omotesando and became one of the faces of Tokyo's soufflé-pancake boom. Each order is made from scratch with meringue folded into the batter, then cooked slowly on a griddle so the pancakes rise tall and wobble when the plate is set down. The signature version comes with whipped butter blended with Manuka honey and maple syrup; seasonal versions add fresh fruit, tiramisu cream or matcha. Waiting about 20 minutes after ordering is normal, because everything is cooked to order.
