Sasanoyuki (tofu cuisine) 笹乃雪
Tofu restaurant in Negishi said to have made Edo's first silken tofu in 1691.
About
According to the restaurant's own account, its founder Tamaya Chūbei came from Kyoto to Edo in 1691 in the retinue of an imperial prince who was to serve at Kan'ei-ji in Ueno, and opened a tofu teahouse in Negishi. He is said to have been the first to make kinugoshi, silken tofu, in Edo. The prince praised it as being as beautiful as snow lying on bamboo leaves, and that phrase, Sasanoyuki, became the shop's name. Negishi was then a quiet village of villas and poets' retreats at the foot of Ueno's hill. The restaurant serves a single tofu course, including its signature ankake tofu in sweet sauce.
