About

Hayashida's bowl is clean and elegant: a clear soup made from Oyama jidori chicken and duck fat, seasoned with a blend of soy sauces, with thin straight noodles, pink low-temperature chashu of both pork and chicken, and a few strands of Kujo green onion. It is light enough to drink to the last drop yet full of umami, and its popularity spawned several branches. The Shinjuku original sits on a narrow side street near Shinjuku-sanchome; you buy a ticket from the vending machine and wait along the wall for one of the few counter seats. The turnover is fast, so even long lines tend to move quickly.
