About

Kaneko Hannosuke serves one thing: Edo-mae tendon, based on the recipe of the founder's grandfather, a tempura chef. Each bowl stacks a whole anago (conger eel) fillet, prawn, squid and small whitefish kakiage, a slow-cooked egg fried in tempura batter, shishito pepper and a sheet of nori over rice, all dressed with a dark, sweet-savoury sauce. Break the egg yolk into the rice and you understand why the line outside this small Nihonbashi alley shop rarely disappears. The shop seats only around 20 people, and staff take your order while you wait. Pickles on the counter, especially the crunchy gobo (burdock), are free.
