Ichiran's Hakata-style tonkotsu ramen is a rite of passage for first-timers: you customise richness, garlic, spice, noodle firmness and green onions on a paper form, then eat alone in a 'flavour concentration booth' with no eye contact with the staff. The Shibuya branch in Jinnan, steps from Center Gai, runs 24 hours and has English forms and staff used to visitors. It's pricier than average ramen, and locals have many alternatives, but the format is genuinely fun and the late-night availability is invaluable.

Tips
- Avoid 12:00–14:00 and 19:00–22:00; at 3am there's often no line
