Yoshino Sushi has stood in Awajimachi, in the old Senba merchant quarter, since 1841, and Osaka food writers routinely call it the home of hako-zushi: the third-generation owner refined the boxed style in the early Meiji era, layering kombu-dashi seasoned rice with kodai sea bream, grilled anago and thick sweet omelette, then pressing it in a wooden frame and cutting it into jewel-like squares. Unlike Edomae nigiri, Osaka-zushi is made to be eaten at room temperature, hours after it is made, which is why it was the lunch of Senba merchants and is still a favourite gift. The ground floor is a takeaway counter; upstairs there are 8 counter seats and table seating where you can eat the hako-zushi with a bowl of soup. Branches in the Takashimaya Osaka and Hanshin department stores sell the same boxes.
