About
Sodaisho has been serving since 2004 and is all about soy sauce: its tare is built on saishikomi (re-brewed) shoyu from Yuasa in Wakayama, the town credited with inventing Japanese soy sauce. The most popular bowl is the dark koikuchi shoyu ramen, with a natural-salt ramen and shoyu or shio tsukemen as alternatives, and Kujo green onion piled on top. The kitchen simmers soup through the night, so it never sells out, and it is open every day until midnight: a rare late option among Osaka's Ramen 100.
