Toritoyo has been in Nishiki for about 90 years. It sells poultry and river fish bought directly from Shiga, with many homemade dishes such as ayu and moroko simmered in soy sauce. Duck is the most popular, especially steamed duck breast marinated in sake, soy sauce and sugar.
