About
Founded in 1928, Miki Keiran makes dashimaki omelets in long copper pans, rolling them quickly over high heat in the Kyoto "kyomaki" style. The dashi uses Rishiri kombu, selected bonito and Nishiki groundwater. There is also umaki with eel from Notoyo, anago dashimaki, and egg-shop treats such as kimi-anpan and custard buns.
