Tomonaga Panya has been baking in the same Chiyo-machi neighbourhood since 1916, in a wooden shop that looks the part. The system is pure Showa: you take a numbered clipboard, wait, then order from staff at the counter from a list of about 30 breads, many under ¥200. Favourites include the butter France (soft baguette oozing butter), the dog-faced Wanchan bean-paste bun, curry bread and cream buns. Many items sell out by early afternoon, and the line is a Beppu ritual locals happily put up with.
