Sushi Tokami, in a basement on the Shimbashi side of Ginza, built its name on red-vinegar shari that is slightly saltier and more assertive than most, designed to stand up to rich tuna from the famed wholesaler Yamayuki. The nine-seat counter serves both lunch and dinner, and it has been a reliable choice for overseas diners for years. Its former head chef Hiroyuki Sato went on to open the even more celebrated Hakkoku, giving Tokami a place in Tokyo's sushi family tree.
