About
The chef comes from Amakusa, off Kyushu's west coast, so most of the seafood comes from there too, along with salt, soy sauce and sake from Kumamoto. Rice is matched to red or rice vinegar depending on the topping, and rice from different regions may be cooked separately and combined. The Michelin Guide awarded it one star in 2026 with a moderate price band, making it a great-value starred meal in quiet Minami-Azabu, a short walk from Azabu-Juban.
