About
Sushi Ichijo defends Edomae tradition with a few personal twists. Halfbeak (sayori) and horse mackerel come accented with ginger and a mirin-soy reduction, and simmered conger eel is served both salted and brushed with sweet sauce so you can compare. The shari uses red vinegar. The chef dreamed of becoming a sushi craftsman as a teenager, and the Michelin Guide awards the counter one star in 2026. Its Higashi-Nihonbashi location is quieter and easier to book than Ginza.
