Star Bar opened in 2000 under Hisashi Kishi, former president of the Nippon Bartenders Association and world cocktail champion, and it remains the textbook of Ginza bartending. The basement room has a long counter, crisp white jackets and immaculate ice, and the classics are the order: Sidecar, Gimlet, Martini, and seasonal fruit cocktails. Kishi is not behind the bar every night, but his trained team executes with the same rigour. Expect quiet conversation, polite formality and an experience that explains why bartenders around the world study Japanese technique.
