Matsunozushi 松乃鮨
Michelin Bib Gourmand neighbourhood sushi shop in Minami-Nagasaki with a Showa-era glass display case, soy-marinated tuna and 'kurakake' saddle-style tamago.
About
A sushi shop of the old school, and proud of it. Toppings sit in a glass display case that oozes Showa-era nostalgia, and the chef cuts and serves everything himself, from omakase sets to a la carte. Tuna is marinated in soy, anago is coated in thick sweet sauce, and egg is served 'kurakake' style, a layered omelette draped over a small mound of rice like a saddle. A Bib Gourmand pick in 2026 and a window into everyday Tokyo sushi culture far from the tourist trail.
