About
Jizozushi takes its name from an image of Jizo given to the chef by a Buddhist temple, and writes 'sushi' with an unusual character that recalls the fermented fish from which nigiri descended. The chef loves literature and history, and the meal reflects it: in a nod to the street-stall days when sushi shops served no snacks, he presents the range of toppings before he starts forming nigiri. Kohada is moulded into the shape of an Edo-era Katsuyama hairstyle and shrimp is paired with nori. One Michelin star in 2026.
