About
Gen Yamamoto honed his craft in New York before opening this serene bar in 2013. The room is a single counter carved from 500-year-old Mizunara oak, and there is no menu: you choose a tasting of four to seven small cocktails and he composes them in sequence from peak-season produce, such as Kochi yuzu, Okayama grapes, Tochigi strawberries or a tomato and gin pairing, often with shochu, sake or gin as a quiet base. Each drink is introduced with the farm and region, and the whole sequence takes about 90 minutes. It is closer to a kaiseki meal than a night out, quiet and precise, and one of the most original cocktail experiences in the world.
