About
Hanabusa's chef trained at a long-established Edomae house and is devoted to fish from Tokyo Bay, regularly visiting ports and buying from fishermen he knows. Fish is cured in kombu or vinegar, or simmered, in the old way, and the rice is seasoned with red vinegar and salt only. Tuna takes centre stage: the nigiri sequence opens with toro and closes with tekkamaki. It is close to Tokyo Midtown and Nogizaka, and holds one Michelin star in 2026.
