About

Zagin, opened in 2014 near Higobashi, serves a frothy, almost cappuccino-like chicken paitan in salt or soy versions, crowned with a crisp ribbon of fried burdock root that adds an earthy crunch. It is from the same group as the sea-bream specialist de at Shin-Osaka, and the formula is similar: rich but clean broth, smoked egg, and a meat-sushi side for the hungry. Open every day from 10:30 to 22:30, it is one of the easiest Ramen 100 shops to fit into a trip.
