Dojima Samboa is one of the independently run Samboa bars, a family of classic counters founded in 1918 that Osaka drinkers regard as the cradle of the citys highball culture. Behind the door on a Dojima side street is a polished wooden standing counter and back bar that look much as they have for decades; the drink is a highball of whisky and soda with no ice, served by bartenders in white jackets. There is no music to speak of and no cocktails menu, just conversation, which is the point.
