About
Uchida opened in Shimabara, Kyoto in 1940 and makes pickles traditionally, with artisans adjusting weight and salt to the season. More than 50 kinds are always available. Its signatures are "Kyo-no-sato", lactic-fermented shibazuke cucumber, and onbu-zuke daikon.
