About
Takakuraya makes Kyoto pickles by traditional methods, hand-pickling vegetables from contracted farmers. Its lightly pickled Daifuku hakusai, a yellow-cored white cabbage, is marinated in a low-salt kombu broth, and the red-leaved "Shizumurasaki" daikon comes from a single grower in Kumiyama. The owner stresses that Kyoto pickles should not be too salty and that each year's batch tastes a little different.
