L'Escamoteur ('the conjurer') is run by a former magician from France and is one of Kyoto's most talked-about cocktail bars. The dim, tiny room is crammed with old books, apothecary bottles and brass oddities, and the menu, a 'book of remedies', blends Japanese ingredients such as matcha, yuzu and shiso with absinthe, gin and whisky. Presentation is theatrical: cloches of smoke, flaming garnishes and the occasional trick. It is walk-in only and seats few people, so expect a short wait at peak times.
