Aritsugu's Nishiki shop is lined with knives of every type, from small paring knives to long sashimi blades, plus copper pans, graters and other kitchen tools. Many of Kyoto's chefs buy here. Staff explain the differences between carbon and stainless steel and will sharpen and engrave your name in Japanese or English on the blade, free. A knife from Aritsugu is one of Kyoto's classic souvenirs.
